Artipelag's pâtisserie, headed by Annie Hesselstad, has developed a pastry inspired by the exhibition Essence-Eksistence with Anselm Kiefer.
The pastry is inspited by Kiefers gray color scales and multifacetted way of expressing both the current and the past. Annie’s creation consists of av vanilla bavaroise, blackberry compote, lemon glaze and sorrel panna cotta on an oat-base.
Interpreting Kiefer was a challenge as it’s a relatively dark range of colours to work with. We tried creating a broader taste profile in the same way that Kiefer interprets several of the world’s extremes at once – while the colours remained more neutral and earthy, says Annie.
The pastry is available in Bådan Café & Pâtisserie during the entire exhibition period (4 June 2022 to 8 January 2023).
