About the Pastry
The Nobel pastry consists of lingonberry compôte flavoured with tar syrup, brownie, lingonberry toffee, yoghurt mousse, chocolate cream, and a lingonberry glaze. The lingonberry meringues and chocolate decorations are identical to those used in the 2023 Nobel dessert created by Artipelag's Head of Pastry, Annie Hesselstad.
