That was when she was finally put in charge of Artipelag\u2019s p\u00e2tisserie and bakery. Many people drop in for coffee and cake as part of their visit to the art gallery, but I want V\u00e4rmd\u00f6\u2019s residents and visitors to see this as THE caf\u00e9 to visit. I\u2019ve always loved the typically Swedish punsch rolls, almond tarts, etc. Punsch rolls are also perfect from a sustainability perspective as they\u2019re made from leftover cake.<\/p>\n\n<\/div>\n<\/div>\n\n<div class=\"max-w-screen-md mt-5 mx-auto first:mt-0\"><div\n  class=\"prose sm:prose-lg lg:prose-xl\"\n  x-data=\"\"\n  x-init=\"$nextTick(function () {\n    const videoEmbeds = document.querySelectorAll('.wp-block-embed.is-type-video');\n    videoEmbeds.forEach(function (embed) {\n      if (!embed.classList.contains('wp-embed-aspect-16-9') || !embed.classList.contains('wp-has-aspect-ratio')) {\n        embed.classList.add('wp-embed-aspect-16-9', 'wp-has-aspect-ratio');\n      }\n    });\n  })\"\n>\n  \n<p>Sustainability is something that\u2019s become increasingly important to Annie. Being a pastry chef involves a great deal of counting and measuring, to make exactly the right quantity of buns and pastries to satisfy the demand. Everything to ensure that as little as possible gets wasted.<\/p>\n\n<\/div>\n<\/div>\n\n<div class=\"max-w-screen-md mt-5 mx-auto first:mt-0\"><div\n  class=\"prose sm:prose-lg lg:prose-xl\"\n  x-data=\"\"\n  x-init=\"$nextTick(function () {\n    const videoEmbeds = document.querySelectorAll('.wp-block-embed.is-type-video');\n    videoEmbeds.forEach(function (embed) {\n      if (!embed.classList.contains('wp-embed-aspect-16-9') || !embed.classList.contains('wp-has-aspect-ratio')) {\n        embed.classList.add('wp-embed-aspect-16-9', 'wp-has-aspect-ratio');\n      }\n    });\n  })\"\n>\n  \n<p>\u2013 I hate throwing food away and we do our best to avoid it. We use small plates upstairs for the buffet, to make sure that people don\u2019t take more food than they can eat. If I make pastries down here and get, say, yoghurt mousse over, we make it into a dessert that they can serve upstairs. The dominant flavours are limoncello, pistachio and mascarpone. I\u2019ve given it a rather graphic look, as a nod to the fact that Fornasetti worked extensively in black and white.
