Artipelag’s Head of Pastry, Annie Hesselstad, Nobel Pastry Chef in 2022 and 2023, has launched a Nobel pastry inspired by her latest Nobel Dessert.

The Nobel pastry consists of lingonberry compote flavoured with tar syrup, brownie, lingonberry toffee, yoghurt mousse, chocolate cream, and a lingonberry glaze. 

Curiosities:
Tar syrup: tar extracted from pine resin, burned and boiled down to syrup with sugar.

The pastry is made with chocolate from Malmö Chokladfabrik, Sambirano 70%.

Contains: lactose, egg, gelatin
